On the sunny leeward slopes of Maui’s Mt. Haleakalā, bees are busy making honey. In the summer months (May–October), they gather nectar and pollen from prolific forests of Wilelaiki, producing a mild amber honey with floral notes and a subtle spice. In wintertime (December–April), the bees frequent tall, fragrant stands of Eucalyptus that yield a deeper, darker honey with mellow caramel undertones.
